About 1/2lb marinated artichoke salad (can be quartered or chopped)
12pk brioche buns (mini)
About 1/4lb feta cheese (thinly sliced or crumbled)
1 container of roasted red pepper hummus
Olive oil for drizzling
Parsley for garnishing
Cooking Guide
Preheat a grill pan or grill over medium heat. Preheat oven to 350.
Grill the chicken for 5-7 minutes per side, or until cooked through.
While the chicken is grilling, prepare the bread. Open the buns and place on a baking sheet, spread a generous portion of the red pepper hummus, then marinated artichoke salad on the bottom bun.
We put the hummus on both the top and bottom bun for extra flavor
Add feta on top
Put the pan with buns in the oven to toast for about 5 minutes. This will allow artichokes to heat and feta to melt.
You can adjust the time in the oven to your desired toasting/melting preference
When chicken is cooked, slice in half to create 12 pieces. Put on half on each of the bottom buns. Top with the other half of the toasted brioche bun and enjoy!
