- Prepare the bread: Spread softened butter (or mayonnaise) evenly on one side of each slice of bread.
- Assemble the first sandwich: Place bread, butter-side down, in a cold or lightly oiled skillet over medium-low heat.
- Layer the cheese: Top the bread with half of the cheese slices.
- 1-2 pieces of Swiss on 1 pieces of bread and 1-2 pieces of provolone on the other piece
- Add the pulled pork and BBQ sauce: Spread half of the warmed pulled pork evenly over the cheese
- Add optional toppings: If desired, add hot honey and/or pickles
- Top with the second slice of bread: Place the second slice of bread on top, butter-side up. (each sandwich should have both Swiss and provolone)
- Cook the first side: Cook for 3-5 minutes, or until the bottom slice of bread is golden brown and the cheese is beginning to melt.
- Assemble the second sandwich: Repeat steps 2-7 with the remaining bread, cheese, pulled pork, and optional toppings.
- Flip and cook: Carefully flip both sandwiches and cook for another 3-5 minutes, or until the bread is golden brown and the cheese is fully melted and gooey. You can gently press down on the top of the sandwich with a spatula to help the cheese melt and the layers adhere
Serve: Remove the sandwiches from the skillet and let them rest for a minute before slicing in half. Serve immediately and enjoy!
Tips for the best BBQ Pulled Pork Grilled Cheese:
- Use good quality cheese that melts well. We used Delallo provolone and pearl valley Swiss. Gouda, Monterrey jack, pepper jack, mozzarella, and American are all good cheeses as well!
- Don't use high heat. Cooking over medium-low heat allows the cheese to melt completely without burning the bread.
- Experiment with different types of bread and cheese to find your favorite combination.
- Don't overstuff the sandwich or the ingredients might squish out while cooking.
- For an extra crispy exterior, try using mayonnaise instead of butter on the outside of the bread.
