Ingredients

  • Vegetables:
       
    • 1.5 lbs small potatoes (like Yukon Gold or red potatoes), halved or quartered
    •  
    • 1 large yellow onion, sliced
    •  
    • 2 bell peppers (any color), sliced
  •  
  • Protein:
       
    • 2pks La Bella Romana chicken sausage with green pepper and provolone
  •  
  • Seasoning:
       
    • 3 tablespoons olive oil
    •  
    • 1 teaspoon dried oregano
    •  
    • 1/2 teaspoon dried rosemary
    •  
    • 1/2 teaspoon granulated garlic
    •  
    • Salt and pepper to taste
    •  
    • red pepper flakes (optional)
  •  
  • Liquid:
       
    • 1/2 cup Caputo Chardonnay
  •  
  • Optional:
       
    • Fresh parsley or other fresh herbs for garnish.

Cooking Guide

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prep the Vegetables:
       
    • Wash and cut your potatoes, onions, and peppers.
  3.  
  4. Assemble the Pan:
       
    • In a large baking sheet or oven pan dish, add  the chicken sausage, potatoes, onions, and peppers. Top with wine, oregano, rosemary, granulated garlic, salt, and pepper. Top with olive oil

    • add red pepper flakes if you desire some heat.

    • Cover with foil and bake for 15-20 minutes
    •  
    • Uncover and bake for 20-30 minutes, or until the potatoes are tender and the sausage is cooked through.

  8. Garnish and Serve:
       
    • Once cooked, remove the pan from the oven.
    •  
    • Garnish with fresh parsley or other herbs if desired.

    • Serve hot.
