Cryovac Meat Explained

At Angelo Caputo's Fresh Markets, we've made a commitment to providing our customers with the highest quality meat products. Our new cryovac packaging ensures just that! After the meat arrives fresh to our warehouse, our skilled butchers hand cut the meat, and immediately package it using state of the art equipment to vacuum seal the meat. By doing this, we cut off the air from touching the meat. This seals in the freshness and prevents the meat from drying out.

This packaging extends the shelf life for you and allows the meat to undergo a natural wet-aging process. So when it is time to cook, the result is a juicy, tender, and flavorful steak every time.

Our meat is still coming to us fresh directly from Iowa Premium. As a family business, we love to partner with other local families and Iowa Premium is just that. Iowa Premium sources from only family farm raised, corn-fed, black angus beef.

The Cryovac Package

After the meat is cut, it is brought over to the cryovac machine to be packaged. The process is simple-- the machine simply airtight seals the fresh meat as is, there is nothing added to it.

Oxygen exposure can lead to oxidation, causing meat to lose flavor, color, and nutritional value. Cryovac packaging minimizes this which preserves the meat's taste and texture.

Cryovac packaging seals in freshness and prevents the meat from drying out. Then we send it directly from our warehouse to our stores!

The Color

You may notice that the color of the meat in the cryovac packaging looks a little different than what you're used to. That is simply from the lack of oxygen touching the meat. When you open the package up and allow the oxygen in the air to touch the meat, the color of the meat will return to the red color you typically see wiht raw meat!
